What is Goat Meat Pepper Soup?
This is not just any soup. Nigerian goat meat pepper soup is a light, watery broth made with a bold blend of local spices and tender goat meat. It’s known for its peppery heat, aromatic flavor, and comforting goodness, often served at gatherings or as a healing meal.

1 kg goat meat (cut into bite-sized pieces)

1 tablespoon pepper soup spice mix

1–2 scotch bonnet peppers (adjust to taste)

1 medium onion (chopped or blended)

1 teaspoon ground crayfish (optional)

1 tablespoon ground ehuru (calabash nutmeg)

2 seasoning cubes

Salt to taste
-
5 cups of water

Scent leaves or fresh basil (chopped)

Optional: dried uziza leaves or fresh uziza seeds
Step-by-Step Instructions
Step 1: Season the Goat Meat
Rinse the meat thoroughly and place in a pot. Add one seasoning cube, a pinch of salt, chopped onions, and a little of your pepper soup spice. Let it marinate for about 15–30 minutes.
Step 2: Cook Until Tender
Add enough water to cover the meat and boil for 30–40 minutes (or pressure cook) until the meat is soft and flavorful.
Step 3: Build the Flavour
Blend scotch bonnet and the rest of the onion. Pour into the pot. Add the crayfish, remaining spice mix, calabash nutmeg, and another seasoning cube. Stir and simmer for another 10–15 minutes.
Step 4: Add Herbs & Finish
Sprinkle in chopped scent leaves or basil. Add uziza if desired. Let the soup simmer for another 3–5 minutes to allow the aroma to bloom.
