Ingredients
Beef (cut into desired pieces)
Cocoyam (peeled and cut into cubes) – about 1 cup
Red palm oil – ½ cup
Oha leaves (washed and chopped) – 2-3 bunches
Uziza leaves (optional, washed and chopped) – 10-12 leaves
Ground crayfish – ½ cup
Cameroon pepper (ground or blended) – 1 tablespoon (adjust to your spice preference)
Stock cubes (crumbled) – 2-3 (adjust to taste)
Onions (chopped) – 1 large
Salt – to taste

Instructions:
Cook the protein: In a pot, heat a little palm oil and add your chosen protein(s). Season with some chopped onions, salt, and pepper. Sauté for a few minutes until browned. Add a little water, cover the pot, and simmer until the protein is tender.
Cook the cocoyam: While the protein simmers, boil the chopped cocoyam in a separate pot until soft. You can mash it slightly with a fork or potato masher.
Simmer the soup: Once the protein is cooked, add the cooked cocoyam, palm oil, ground crayfish, pepper, and stock cubes to the pot. Stir well and simmer for a few minutes.
Add vegetables: Add your chopped onions to the simmering soup and cook for a minute or two until softened.
Finishing touches: Finally, stir in the chopped Oha leaves and Uziza leaves (if using). Important: Do not cook the Oha leaves for too long, as they lose their flavor quickly. A minute or two of simmering is enough.
Seasoning: Taste the soup and adjust the seasoning with salt and pepper if needed.
Serve: Turn off the heat and let the soup sit for a few minutes to allow the flavors to meld. Serve hot with your favorite swallow (e.g., fufu, pounded yam, eba, semovita).
