This week, we’re putting Jollof in the spotlight.
THE JOLLOF – What you’ll need
- Long-grain parboiled rice
- Tomatoes
- Red peppers
- Scotch bonnet
- Onion
- Tomato purée
- Vegetable oil
- Chicken stock
- Curry powder
- Thyme
- Seasoning
- Salt
- Bay leaves for extra depth.
LET’S MAKE IT
1. Blend your tomatoes, peppers, Scotch bonnet and onion until smooth.
2. Build the base
- Fry sliced onions in oil.
- Add tomato purée and cook for a few minutes.
- Pour in the blended pepper mixture.
- Cook until the sauce thickens and the excess liquid reduces.
3. Season
- Add your curry powder, thyme, seasoning, salt and chicken stock.
- Taste before adding the rice.
- The sauce should be full of flavour.
4. Add the rice
- Add washed rice and stir until every grain is coated.
- Cover tightly and cook on low heat until the rice is tender and has absorbed the sauce.
5. Let it rest
- Turn off the heat.
- Leave covered for 5–10 minutes, then gently fluff.
That’s it. Your Jollof is ready.

Serve it with whatever makes your plate complete.

Don’t rush the sauce.
- That’s where the flavour starts.
- Let the pepper and tomato base cook down properly before adding your rice.
- And for that deeper, slightly smoky party-style flavour?
- Let the bottom of the pot catch just a little towards the end.
