How to Make Plantain Porridge.
INGREDIENTS

4 unripe plantains (peeled and diced)

1 ripe plantain (optional, adds a touch of sweetness)

1 small onion (chopped)

2-3 cups water or stock

12 smoked fish or dry fish (cleaned and deboned)

1 cup ugu, spinach, or scent leaf (sliced)
-
1 small scotch bonnet or bell pepper (blended or chopped)

2 tablespoons palm oil
-
1 seasoning cube
-
2 tablespoons crayfish (blended)

Salt to taste
DIRECTIONS
Step 1:
Peel and dice your plantains. If you’re using a mix of ripe and unripe, keep the ripe ones aside, we’ll add those later.
Step 2:
In a pot, add the diced unripe plantains, chopped onion, pepper, crayfish, smoked fish, seasoning cube, and enough water or stock to cook them. Cover and boil for 10-15 minutes, or until the plantains begin to soften.
Step 3:
Add your palm oil and the ripe plantain cubes (if using). Stir and let it cook a little more so the flavors really blend.
Step 4 (Optional):
To get that rich, porridge-like texture, you can gently mash a few of the plantain cubes with a spoon. This helps thicken the dish naturally.
Step 5:
Add your vegetables, ugu, or spinach, and simmer for just 2–3 minutes. Adjust your salt if needed, and that’s it!
Serving Tip:
Serve hot and enjoy it as is, it’s a satisfying meal all on its own. But if you’re feeling fancy, pair it with a chilled drink or a glass of water for that extra refresh. 😉
