Ingredients For Moi Moi
- 3 cups of beans
- 1 kg of Mackerel
- Half cup of vegetable oil
- 3 seasoning cubes
- Salt to taste
- 1 cup of sliced onions
- Tatashe (about 5 to 10)
- 2 Hot pepper
- Crayfish (1 cup)
STEP ONE
Soak beans in clean water and leave for some few hours to soften.
STEP TWO
Boil fish with seasoning, salt, and onions for 5-8 minutes. Allow it to cool, then remove bones and flake the fish.
STEP THREE
Add beans in bits to a blender, add red bell pepper(Tatashe), hot pepper (ata rodo) and onions, enough water to cover and blend till very smooth.
STEP FOUR
Pour blended beans into a large bowl
STEP FIVE
Add seasoning, crayfish, and salt to the pureed beans and beat with a wooden ladle (turning stick) for about 10 minutes to incorporate air in the blended beans. This is just to achieve a fluffy and light moi moi
While still in the bowl, add the fish.
STEP SEVEN
Set a large pot on medium heat
STEP EIGHT
Using a scoop, add the blended beans in the moi moi wrapper in bits (you can use moi moi leaf or moi moi plate instead of moi moi wrapper ) leave some space in the wrapper to allow expansion during cooking.
STEP NINE
Continue this process till you have finished all the Blended beans.
STEP TEN
Add it to the already boiling water in the pan. and cover tightly. Cook for about 40-50 minutes or till moi moi is set.
Check from time to time and add water accordingly
